3 c. chopped fruit
2 c. light brown sugar
1 c. white sugar
1 c. vinegar
1 c. lime juice
1 c. golden raisins
1 c. chopped onion
1/4 c. chopped fresh ginger
1 large clove garlic minced
2 Tbs. mustard seed
2 tsp. red pepper flakes
1 cinnamon stick
5 whole cloves
6 c. of jars for canning
Bring all ingredients to a boil; turn the heat way down and simmer for 15 minutes.
Cover and let sit overnight.
Next day, cook down to desired consistency and seal in jars.
*If using dark brown sugar, cut the amount in half, or at least use equal parts white & brown instead of 1 to 2.
